Job Summary:
We are seeking an experienced and talented Continental Chef with expertise in continental and Chinese cuisines and knowledge of Pakistani dishes. The ideal candidate will have a strong culinary background and excellent leadership skills to oversee the continental kitchen operations, supervise kitchen staff, and ensure smooth coordination with the Pakistani kitchen team. This role is crucial to maintaining high standards of quality, presentation, and food safety across all continental and Chinese dishes.
Key Responsibilities
Menu Planning and Development:
- Develop, design, and update the menu for continental and Chinese cuisines, ensuring variety and seasonal offerings.
- Collaborate with the Executive Chef and Pakistani kitchen chef to ensure menu integration and balance across different cuisines.
- Innovate and experiment with new recipes, flavors, and plating techniques to enhance the guest experience.
Food Preparation and Quality Control:
- Prepare and oversee the preparation of continental and Chinese dishes, ensuring consistency, presentation, and taste meet high standards.
- Conduct regular quality checks on food ingredients and monitor the quality of dishes before they reach the customers.
- Ensure proper portion control, food presentation, and timely execution of all dishes.
Kitchen Staff Supervision:
- Manage, supervise, and train continental kitchen staff, including cooks, assistants, and other personnel.
- Assign duties, monitor performance, and maintain discipline among kitchen staff.
- Encourage teamwork, guide skill development, and ensure adherence to standard kitchen procedures.
Coordination with Other Kitchens:
- Work closely with the Pakistani kitchen chef and coordinate on order timing, shared kitchen resources, and menu items that require joint preparation.
- Ensure smooth kitchen operations by organizing workflow and minimizing delays between different sections.
Inventory and Budget Management:
- Monitor stock levels and coordinate with purchasing for inventory needs specific to continental and Chinese dishes.
- Manage kitchen costs by controlling waste, ensuring portion accuracy, and optimizing ingredient usage.
- Contribute to budget planning by providing input on cost-effective ingredient options.
Health and Safety Compliance:
- Ensure all kitchen practices comply with health and safety regulations.
- Maintain a clean and organized kitchen environment and ensure all team members follow food safety and sanitation protocols.
- Conduct routine inspections and implement corrective actions for any safety hazards or quality issues.
Skills and Qualifications
- Experience: Minimum 10-12 years of experience in continental and Chinese cuisine, with some experience in Pakistani cuisine.
- Education: Culinary degree or equivalent professional training preferred.
- Leadership Skills: Proven ability to lead and develop a team in a high-pressure kitchen environment.
- Culinary Expertise: Excellent knowledge of continental and Chinese cuisines, with an understanding of Pakistani flavors and cooking methods.
- Communication: Strong verbal and written communication skills for clear coordination with staff and other kitchen teams.
- Attention to Detail: High standard for food quality, presentation, and consistency.
- Adaptability: Ability to adapt to different kitchen requirements, menu changes, and customer preferences.
Working Conditions
- This role requires flexibility in hours, including weekends, holidays, and extended hours as needed.
- Must be able to work in a high-heat kitchen environment and stand for extended periods.
