The Aga Khan University Hospital is a not-for-profit healthcare institute that offers all medical services to their patients under one roof. In addition to the tertiary care hospital in Karachi, AKUH has a network of 4 secondary care hospitals, 30+ Medical Centres, and over 290+ Clinical Laboratories, 30+ Pharmacies in over 120+ cities across Pakistan. It also offers Home Healthcare Services and home deliveries of medicines. The Hospital provides Zakat for those patients who are eligible, and the health systems offers generous Patient Welfare to support those in financial need. In recognition of its high quality and patient safety, the AKUH is accredited by the Joint Commission International (JCI) as an Academic Medical Centre and its Clinical Laboratories are accredited by the College of American Pathologists (CAP) for fast and accurate testing.

The Nutrition and Food Services Department (NFSD) provides a range of products and services to students, faculty, staff as well as patients and their attendants. It comprises of a team of experienced clinical nutritionists, dietitians and foodservice professionals. The services are provided through six sections; clinical nutrition, patient meal services, cafeteria & catering services, food production, food safety management and cost control and approximately 13,000-15,000 meals are served in a day.

Responsibilities
  • Ensure smooth food services operations.
  • Coordinate communication between staff working in front and back of the House.
  • Organize and supervise shifts.
  • Supervise waiting staff and provide assistance, as needed.
  • Keep records of costs and revenues on a daily, weekly and monthly basis.
  • Arrange proper on-boarding (scheduling training, ordering uniforms etc.) for new employees.
  • Monitor compliance with ISO 22000:2018, JCIA and Hazard Analysis & Critical Control Points (HACCP) and hygiene Standards.
  • Ensure welcoming and responsive attitude all the time resulting in excellent customer services.
  • Ensure that food and products are consistently prepared and served according to the recipes, portioning, cooking and serving standards.
  • Ensure availability of inventory and food items at the time of operations opening, closing and food preparations.
  • Actively manage and support staff in preparing food, servicing customers and overseeing the coordination of deliveries.
  • Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with departmental policies and procedures.
  • Responsible for staff time and labor management i.e. on & off duties, break hours, and leave etc.
  • Ensure standards of employee personal hygiene (haircut, uniforms, nails & head covering) as per defined protocol.
  • Handle staff complaints, behavioral or attitude problems and grievances.
  • Ensure implementation of guidelines, policies & procedures and effectively monitor operational standards, training programs and maintain appropriate documentation and required data.
  • Responsible to ensure all daily/weekly routine cleaning is done by respective employees in their work areas and special cleaning schedules are followed.
  • Ensure all cutlery, crockery, glassware, utensils serving equipment, pots and pans are washed at the correct temperatures and sanitized before use in any food service area.
  • Rotations within other operating areas within NFSD (i.e. Patient Meals/Cafeteria and Function Services etc.), when needed.
Requirements
  • Intermediate, graduate preferred.
  • Diploma/Degree in hospitality management will be an added advantage.
  • 3-5 years of related work experience as Assistant Restaurant Manager in a reputable institute/restaurant or similar role.
  • Extensive food and beverage knowledge, with ability to remember and recall ingredients and dishes to inform customers and wait staff.
  • Ability to work and handle fast-paced operations of food services.
  • Knowledge of ISO22000:2018 Food Safety Management System.
  • Proficiency in the use of Microsoft Office package.
  • Strong verbal and written skills in English & Urdu.
  • Good computation and reporting skills.
  • Customer Centric Approach.
  • Strong communication skills and ability to manage diverse teams.
  • Willingness to work in shifts.
